New Coffee - Mexican Organic Chiapas
Chiapas is the southernmost state in Mexico, at the Guatemalan border. The coffees are distinct from the Oaxaca Plumas and Coatepec coffees: they are a little brighter, sweeter, and bear some resemblance to the Huehuetenango coffees of Guatemala. Oaxaca is my other favorite Mexican origin, but the really good Chiapas coffees like this one have been consistently excellent, are a brighter and livelier cup. Many of the coffees from Chiapas are from small farms, cooperatively wet-milled and sold. This coffee displays a mild intensity / sweetness, light body. A sweet and cup with interesting nut, chocolate and fruit aspects.

Meet the Moasters Part I
We're up to day 12 of Movember in these pics and starting to look pretty scary! In order of age & beauty today we present David & his mo known as Borat (very nice, I like!) Roasting his coffee at the front of the store the happy Bay Coffee clients have watched his transformation from gentile roaster to tough guy roaster seemingly overnight! Chopper beware!

And here is Andrew and his mo aka The Walrus (although we think he looks more like The Edge from U2). Andrew likes nothing better than hitting the discotheques around Sydney showing off his luxurient handlebar mo to his fellow bros!
Meet The Moasters Part III
Now Sean, he'll a real worry. He had to have a head start on the rest of us, but his mo (aka Chopper) is coming along very nicely now. Since this photo was taken a few days ago he has started to sculpt his mo into a Kid Creole & The Coconuts (am I showing my age now) style pencil thin moustache. Very hip indeed!
